Sodium diacetate is a molecular compound of sodium acetate and acetic acid, referred to as SDA, also known as sodium diacetate, monosodium diacetate, and solid acetic acid in Japan. It appears as a white crystalline powder, hygroscopic and slightly odorous with acetic acid. It is flammable and easily soluble in water and ethanol. It has very low toxicity, with an oral LD50 of 3.31g/kg for mice and 4.96g/kg for rats, and an acceptable daily intake (ADI) of 0~15Chemicalbookmg/kg per person. The final metabolites of sodium diacetate in organisms are water and CO2, which will not remain in the human body and have no destructive effects or side effects on humans, animals, and the ecological environment. Because it is safe, non-toxic, non-residue, non-carcinogenic, and non-teratogenic, it is recognized by the World Health Organization as an "O" toxic substance, and approved by the Food and Agriculture Organization of the United Nations (FAO) and the World Health Organization (WHO) as a mildew-proof, preservative, and fresh-keeping agent for food, grains, and feed.
