Lecithin industrial product purity ≥ 99%, pale yellow to brown viscous liquid or powder, with a slight characteristic nutty odor. Melting point 23-26℃, boiling point decomposes above 100℃. Vapor pressure negligible (25℃), relative density 1.03 (20℃). Solubility in water: dispersible, soluble in chloroform, ether and vegetable oils, insoluble in acetone. Stable under normal conditions, incompatible with strong acids and bases.
