Sodium benzoate industrial product purity ≥ 99%, white crystalline powder or granules, odorless. Melting point >300℃ (decomp), boiling point decomposes. Vapor pressure negligible (25℃), relative density 1.44 (20℃). Solubility in water: highly soluble, slightly soluble in ethanol, insoluble in benzene and ether. Stable under normal conditions, incompatible with strong acids (releases benzoic acid) and heavy metal salts.

It is also used as a preservative in medicines and cosmetics. As a food additive, sodium benzoate has the E number E211.
