Ethyl benzoate is a colorless liquid at room temperature and pressure, with an aroma similar to wintergreen oil and ylang-ylang oil, and is commonly used as a food and flavor additive. It can participate in many different types of chemical reactions, including hydrolysis reactions, where ethyl benzoate can be hydrolyzed into benzoic acid and ethanol. Hydrolysis usually needs to be carried out under the catalysis of an acid, such as hydrolysis under the catalysis of sulfuric acid to obtain benzoic acid and ethanol; esterification reactions can be carried out, where ethyl benzoate can undergo an esterification reaction with alcohols under the catalysis of an acid to produce other ester compounds; reduction reactions can also be carried out, where ethyl benzoate can be reduced to benzyl alcohol and ethanol.
